Fun lunchboxes and everyday snacks



Nothing says fun and cute like princess sandwich cutters and tiny containers.
Here is a sandwich snack I made for Emma. It took no extra time to do and it makes her so happy!  Its absolutely worth it.  You don’t need to add a food they don’t like for you to make a fun lunchbox. Sometimes it’s good to do fun things with food without having them try something new.  It makes them more open to tasting that string bean when you actually do offer it.

 
This box includes a cheese sandwich, carrot sticks and yoghurt.  I used the LunchPunch  www.thelunchpunch.com sandwich cutters for this sandwich.

Recipe of the Week - Egg and Bacon Pie




A fabulous al fresco dish to enjoy in the great outdoors. Pack a picnic basket with summery salads and other tasty treats and head for the mountain's before it get's too hot!!!

This week's recipe is taken from The American Academy Junior School International Cook Book and was kindly supplied by a Grade 1 mum Mrs Ingrid Scott.

Egg and Bacon Pie

Ingredients:
8 rashers of Bacon
8 Eggs
Grated cheese
1 large onion chopped
Black pepper for seasoning
1 packet short crust pastry
2 tablespoons of milk
Servings: 6

Cooking time:
Oven temperature: 180⁰c 1 hour

Method:

1. Cut pastry in half and roll out one half to line an 8-10inch pie dish up to rim. Brush some milk over the rim.

2. Lay half the bacon on bottom of the pastry lined dish.

3. Take 4 eggs and break them whole into the pie dish evenly over the cheese. Follow with a layer of some onion and then some cheese. Repeat layering.

4. Sprinkle some pepper over the top.

5. Roll out rest of the pastry and cover pie dish. Cut to size and pinch edges together to seal. With rest of pastry cut 4 leaf shapes to decorate the top. Set with milk. Brush rest of pie with then into oven on middle shelf for 50mins, until pastry is golden brown.

Delicious hot or cold. Serve with green salad and cherry tomatoes.

Great for picnics too!

Heart Mindfulness Meditation


If you have been putting into practice the past two weeks easy to follow relaxation techniques, you will be beginning to feel the benefits. Just 10-15 minutes every other day of these techniques will pay physical, emotional and psychological benefits!

This week we focus on our hearts desires, something that’s side-stepped in our busy caregivers lives, as we put (quite rightly so) our children’s needs and desires before our own. For example, does the cat/dog, children, your husband always eat breakfast before you? When did you last take a few hours for yourself to pick up an old hobby, see a friend, read a book etc?

Too often we ignore the pleas of our own hearts, instead listening to the practicalities of our heads or the demands of our loved ones. This head/heart divide however, only serves to complicate our lives even more through not tuning into, hearing or following what makes our hearts feel good – no wonder modern day humans suffer from so many heart related disorders! Through regular meditation we can better prioritize our busy to-do-lists, as we often send copious amounts of time on unimportant things, leaving vitally important things starved for our attention. Meditation lets us truly see what is truly important in our lives. So, to help us ignore the (often really unnecessary) ‘I should’s’ for the ‘I feel like….” impulses that make us truly happy and content, you can use the following Heart Mindfulness Meditation.

WEEK THREE RELAXATION TECHNIQUE
Heart Mindfulness Meditation

Ask yourself - When was the last time you felt so relaxed you didn't want to open your eyes? So light and free you couldn't help smiling and everything felt soooo good? Have you ever felt peace and calmness so tangible you think you can see it? Practicing Heart Mindfulness Meditation is a life-changing experience, as our hearts are a natural source of peace, especially when we are truly linked to them and to our hearts desires, and living our hearts ( and not society’s or parental pressure) desires. The heart calms and transmits harmonic vibrations, which you experience as love and peace, so when you are relaxed you will automatically connect with your inner peace

This simple meditation when regularly practiced allows you to:-

• Open to love - fully giving and receiving. Your heart is the key to everlasting joy and happiness that you have been searching for with this Heart Meditation helping unlock that very door to happiness;

• Forgiveness – being better able to forgive or ask for forgiveness;

• Be compassionate;

• Overcome jealousy;

• Trust your inner promptings – making your day flow easier for you;

• Feeling of peace and calmness from within

• Feeling of love and feeling loved plus being open fully to giving AND receiving;

• Reduced negativities - each time we have negative emotions, we store them in our hearts when they are not expressed. Therefore we accumulate many negative emotions on a daily basis, which this Heart Mindfulness Meditation helps clear;

• Feeling lighter and freer - like anything is possible

• Cope with stress/conflict/anger better – Recent studies prove meditation increases the brains neuron connectivity which regulates your emotional behaviour and ability to deal with conflict. Another study found meditation decreases the levels of Cortisol, the stress-causing hormone in your body, regular meditators having measurably less anxiety and lower levels of anger and fatigue.

• Decrease your chances of having a heart attack or stroke - Researchers who tracked 201 Meditating people found those who meditated had lower blood pressure plus a 47% reduction in strokes, deaths and heart attacks. To prove this works, that it’s not some ‘placebo’ effect, even unwell cats, became less stressed when they listened to meditation music, calming down and breathing more slowly.

Heart Mindfulness Meditation
Make yourself comfortable, seated, in comfortable, loose clothes. Before you begin, remember: do not worry if you do not feel anything straight away, as with all good meditative practices, they take just that – practice, always remember, there is no ‘right’ or ‘wrong’ way to do this, there just IS. We are all individuals, moving at our own paces, with different levels or abilities, which are all good

“With closed eyes, let your breath flow naturally in and out, simply feeling the ebb and flow of your breath coursing through your body. Direct your whole attention to your heart area. Feel a tingle, warmth or ‘connection’ when you remember a time when you were happy (You don't have to remember exactly what happened, the details etc, it's the 'happy' feeling that matters).

Where do you sense this feeling coming from? (Many people feel warmth or tinges around the chest area. Don't worry if you can't recognize the difference at one go. Simply stay relaxed and you will eventually sense into this, if not this session, then one after).

Gently put your left hand on this heart area for a few minutes, feeling the connection. (It is important not to focus on it, or try to feel more, simply keep relaxing and enjoy these feelings).

Next, allow and feel a sense of love or energy rising outwards from your heart throughout your whole body. Again, simply relax and focus on this feeling (Again, this feeling will come with time, the main focus is to simply ‘be’, losing your thoughts, focusing on the relaxing music you are playing in the background, and tuning into your heart. Remain connected for 10 to 15 minutes, purely enjoying this feeling).

TIPS:

1) Some people feel something on the first go; some people need a few tries before they feel anything. That's normal. And don’t be surprised that when you do feel something, that it varies, session to session. That's normal too. The key here is to simply relax.

2) Crystals, when either placed near the heart during a meditation or worn throughout the day in jewelry, can greatly help opening ones heart. Pink and Green Crystals are the best, as these resonate to the Heart Chakra’s energy, such as Rose Quartz, Jade, etc.

3) As with all scripted relaxation techniques, this method is greatly enhanced if you tape-record the script, to play it back to yourself, alongside some relaxing music to further enhance your Meditating experience (see last week’s notes on music). Summer is here and it can be lots of fun, especially here in Cyprus. Parents can enjoy the sun responsibly and the best way to protect children by the sun’s harmful UV rays is by being sun-care savvy. 

Here is a stunning fact:

Just one blistering sunburn in childhood can double a child’s lifetime risk of melanoma, the deadliest form of skin cancer, according to the Skin Cancer Foundation.

Here are some tips to help protect your little ones:

SAFE SUMMER TIPS:

*Time it! Choose to expose children to the sun when UV rays are not so intense, ie before 10am and after 4pm and seek shade at all times.

*Sun-protection Clothing - Use sun-protection clothing and swimwear with at least UPF30+ rating. UPF50+ provides the best protection and it means the clothing or swimwear blocks 97.5% of UV rays from reaching the skin. Sunscreen need not be applied and re-applied on covered skin, which provides additional peace of mind at the beach.

*Sunscreen - Use sunscreen with SPF15 or higher that is broad-spectrum (ie blocks UVA and UVB rays). Remember that sunscreen should not be used on infants before they reach 6 months of age. Apply sunscreen in all exposed areas, especially overlooked ones like the ears and tops of feet, half hour before exposure and re-apply at least every two hours.

*Use a hat - Choose a wide-brimmed hat that covers the face, ears and neck that has a UPF30+ rating.

*Protect the eyes! The skin around the eyes, as well as baby eyes are especially vulnerable to UV rays. Children should wear sunglasses starting at 6 months. Look for child-size sunglasses that offer at 100 percent UVA and UVB protection, cover as much skin as possible (wraparound styles are great), and are impact- or shatter-resistant.

WHAT TO DO IF YOUR CHILD GETS A SUNBURN:

*Sunburns on children under 1 year old should be treated as emergencies. Call your doctor immediately.

*If your child is over 1 year of age, call your doctor is there is intense pain, blisters, the child is lethargic or has fever over 38.3 C

*Sunburns can cause dehydration. Give your child plenty of juices and water to replenish.

*Shower your child with lukewarm water that can bring the skin temperature down

*    Do not use alcohol

*    Do not use lotions containing any pharmaceutical substances unless prescribed by your doctor

*    Keep your child away from the sun, until the sunburn has completely healed.

As far as the Refuse Collection Tax is concerned, the payment deadline has already passed and legal proceedings have begun.

Funny Finger Puppets

Emma and I came up with the cutest, funnest finger puppets... totally by accident! I was ready with my felt, thread and needle, I had already started drawing outlines, when Emma took one of the pipe cleaners, curled it all around her finger, and gave me the best idea ever! We made a piglet, a duck, and a funny looking cow :)

What you'll need

Pink, yellow, black & white pipe cleaners
Pink, yellow & white medium pompoms
4 pink tiny mini pompoms
Googly eyes
Pink, orange, white & black pieces of felt
Hot glue

Curl the pipe cleaners around your child's finger. For the cow, place the black and white pipe cleaners together and curl them at the same time. Cut out a closed U shape out of white felt and glue it to the white pompom, draw two dots for the nose and glue the googly eyes. Next cut two small triangles out of the black felt and glue to the top of the head and right next to them glue two pink mini pompoms. Then glue the head to the body.

For the pig, take the pink pompom glue mini pink pompoms as ears. Cut a small circle out of the pink felt, draw two dots for the snout and glue to the head. Next glue googly eyes or as we did, cut small circles from white felt and draw a dot to each and glue to the head. Once its done glue it to the pink body.

For the duck cut a semi circle shape out of orange felt and glue it to the yellow pompom, then glue the googly eyes to the head. Once the head is done glue it to the yellow body.

Let the fun begin! Emma loved them and played with them for hours!

Brandy Sour



The Brandy Sour is a mixed alcoholic cocktail that has been cited as the national drink of Cyprus. While other forms of the Brandy Sour cocktail exist, the Cypriot variety is a distinct mixture, which only shares the basic brandy and lemon flavourings with other variants. Both brandy and lemons are among Cyprus's major exports, and both have distinctive Cypriot characteristics.

The Cypriot Brandy Sour style was developed following the introduction of the first blended brandy made on Cyprus, by the Haggipavlu family, in the early 1930s. The cocktail was developed at the Forest Park Hotel, in the hill-resort of Plátres, for the young King Farouk of Egypt, who often stayed at the hotel during his frequent visits to the island.The Brandy Sour was introduced as an alcoholic substitute for iced tea, as a way of disguising the Muslim monarch's preference for Western-style cocktails. The drink subsequently spread to other bars and hotels in the fasionable Platres area, before making its way to the coastal resorts of Limassol, Paphos and Kyrenia, and the capital Nicosia.

A typical recipe for a Brandy Sour should include:

2 measures Cypriot brandy (typically KEO VSOP or Haggipavlu Anglias brands)
1 measure Cypriot lemon squash
2-4 drops of bitters (Angostura or Cypriot Cock Drops brands)
Top up with lemonade or soda water
Ice

Cocktail brandy produced in Cyprus is typically less strongly flavoured than cognac or armagnac, and most brands have a caramel-biased aftertaste balance. Cyprus also produces distinctive, yellow-green coloured, bitter lemons — used by British author Lawrence Durrell for the title for his autobiographical novel Bitter Lemons of Cyprus. These lemons are used locally to produce a bitter-sweet lemon cordial, which forms the sour and bitter base for the Brandy Sour cocktail. Bitters are added to taste, and while the locally produced Cock Drops brand is widely available on the island, the internationally-recognised Angostura brand is increasingly used. These ingredients are added to a tall glass and stirred, before the glass is topped up with lemonade (for a classic, slightly sweeter drink) or soda water (for less sweetness and a more pronounced brandy flavour), and plenty of ice.

Further preparatory tips for Meditating

In addition to the tips from last week, it is always essential prior to a meditation to avoid too many stimulants (such as tea, coffee, chocolate, cigarettes, energy drinks etc), as these will have a counter-productive effect upon your meditation. So, if you can, for a few hours before a meditation, try to drink simply herbal teas or water – essential in these hot days anyway for your health.

For hundreds of years humans have acknowledged and respected waters beneficial properties, these being:-

Cleansing for your body, mind and soul - a shower last thing at night will help you get rid of any ‘pollution’ both physically, emotionally and vibrationally you have picked up from places and people you have interacted with throughout the course of the day.

Healing – healing mineral hot springs for arthritic complaints, mineral or mud or Epsom bath salts being all very efficacious to your health. We are fortunate in Cyprus that we can enjoy the sea nearly all year round – a wonderful way to maintain health.

Beautifying – hydrating your body, along with regular meditation, are two great ways to keep your body working at optimum levels and your skin to stay plump and wrinkle free. Water also aids blemish free skin and all your bodily systems to work at optimum levels. Meditation stimulates a better immune system and balanced hormones, prevents high blood pressure, lowers cholesterol, decreases migraines, P.M.S. viruses and normalises body weight –but more on the physical benefits of Meditation next week!

This week we have yet another wonderful, easy Meditation practise is listed below, for you to enjoy. Please read last week’s ‘tips’ – underneath first, simply to refresh your memory about the do’s & don’ts before Meditating – enjoy.
Relaxed Body, Relaxed Mind

This simple technique relaxes your entire body, thereby relaxing your mind. As through directing your attention to specific body parts, to tighten the muscles then let them go, a proven technique to calm your mind in the process.
As before, follow Kara’s preparatory tips listed below, and, having shuffled around, to find your most comfortable position:-

“Direct your attention down to your toes, scrunch them over, to let them fall away, completely letting go of any tension in your toes.
Moving up to your calves, under enormous pressure when seated for long periods of time, gently tighten your calves, feeling them ball up, to release them, letting them go soft.
Keeping your lower legs relaxed, now tense up your thighs and hamstrings to let them release back.
Now your glutes, tense them up, feeling your body slightly rise up from your chair as you do so, now let your glutes go, sinking deeper into your chair, your whole lower body now relaxed &  heavier, sinking deeper into your seat.
Next contract your stomach muscles, pulling them in, feeling them harden and tighten, to slowly and completely unwind them.
Sense into your chest, constricting your pectoral muscles or pushing your chest out, to then slowly let them loosen, softening.
Now your back muscles, picture and feel them tightening, sensing into them, constricting them, to let your spine settle deeper into your chair.
Keeping all these muscles relaxed, squeeze and lift your shoulders up towards your ears, to let them gently drop back, fully relaxed, feeling your neck lengthen as a consequence.
Moving onto your arms. tense your upper and lower forearms, to let everything go.
Next your hands and fingers, scrunch them up tight into a ball, to release them, feeling the calm this brings from everyday ‘doing’.
Gently move your head (as long as you have no neck impingements) from side to side, easing out any tension here.
The squeeze up, scrunch up all your face muscles tight, letting them completely go, feeling the deep peace this brings.
Finally, with closed eyes, stare intensely into the back of your eyelids, making your eyeballs tight; to then let them sink back into their sockets, perfectly at ease.
Just enjoy this feeling of complete bodily relaxation, and let your mind drift away”.
                                   
 END OF MEDITATION

Kara’s Tips to ensure you get the most from your Relaxation time

•Make yourself comfortable, preferably seated (as lying can make the meditative novice prone to sleeping instead of meditating)
•Ensure you are in an area of your home or nature, where you know you will not be disturbed.
•Turn off any mobile or landline phones, and instruct anyone in your home or vicinity that you wish to be undisturbed for this time. If at home, it is always a good idea to simply stick a note on your door stating ‘Meditating, Do not Disturb”.
•Soft, harmonic music can be played, preferably ‘memory free’ and ‘word’ free music, as in just melody or nature sounds, so that nothing cerebral, via words or associations can prevent you from achieving Alpha & Theta brain levels. As with any new hobby, it is always nice to buy something new (as in new trainers for jogging, artists easel for painting etc) to start your new venture, so investing in just a new CD is a wonderful start to Meditating. As finding a piece of music that easily relaxes you gives you a head start to begin with.
•Use a gentle timer with the more advanced Meditations, to help you realize when it is time to come ‘back to reality’. A good way is to use a music track you know is a specific length that you wish to meditate to, so that the ‘end’ does not shock you too much on coming out of your tranquil way of being.
•Place your feet, preferably barefoot, on the ground, ensuring you are grounded.
•Gently let your eyelids touch.

Relaxation Techniques for busy Mums and Dads


Scientific research shows that the key to most things we want in life lies in a particular state of mind, called the Alhpa & Theta brainwave frequencies, which you experience in light sleep. The goal is to achieve this state of mind during waking consciousness, to thereby overcome any stressful situations (having a houseful of children in the summer holidays), negative thought patterns (will he/she ever eat my home cooked food?) whilst triumphing over any unwanted habits (snacking on children’s discarded foods, evening alcohol to ‘relax’ etc) plus strengthens your immune system and your emotional and physical being (after the rollercoaster of pregnancy, birth and sleepless nights etc).

Kara’s Tips to ensure you get the most from your Relaxation time

• Make yourself comfortable, preferably seated (as lying can make the meditative novice prone to sleeping instead of meditating)

• Ensure you are in an area of your home or nature, where you know you will not be disturbed.

• Turn off any mobile or landline phones, and instruct anyone in your home or vicinity that you wish to be undisturbed for this time. If at home, it is always a good idea to simply stick a note on your door stating ‘Meditating, Do not Disturb”.

• Soft, harmonic music can be played, preferably ‘memory free’ and ‘word’ free music, as in just melody or nature sounds, so that nothing cerebral, via words or associations can prevent you from achieving Alpha & Theta brain levels. As with any new hobby, it is always nice to buy something new (as in new trainers for jogging, artists easle for painting etc) to start your new venture, so investing in just a new CD is a wonderful start to Meditating. As finding a piece of music that easily relaxes you gives you a head start to begin with.

• Use a gentle timer with the more advanced Meditations, to help you realize when it is time to come ‘back to reality’. A good way is to use a music track you know is a specific length that you wish to meditate to, so that the ‘end’ does not shock you too much on coming out of your tranquil way of being.

• Place your feet, preferably barefoot, on the ground, ensuring you are grounded.

• Gently let your eyelids touch.
Simple Breathing Technique

An easy way to quieten your mind is to count 1 through to 10 on inhaling, then count 1 through to 10 on exhaling. This will be easy to start with, but might prove more challenging as the minutes tick by, so if you naturally find your mind wandering, simply refocus on counting all over again. Don’t be too hard on yourself if your mind does wander, its natural to begin with, as Meditation, like everything else, takes practice. See how long it takes you to get to 10 without your mind wandering.

Fathers Day - Barbecued Sirloin with Chimichurri sauce

Make your dad or husband feel special this Father's Day (Sunday 17th June) by cooking his favourite foods. I am sure you know the saying 'The way to a man's heart is through his stomach!!' I know I will be spoiling my dad this year as I am fortunate enough to be spending the day with him in Ireland :) Fire up the barbecue again and serve up this deliciously spicy dish for the man in your life :)


Barbecued Sirloin with Chimichurri sauce
Ingredients

For the chimichurri sauce

2-3 long red chillies, seeds removed, finely chopped
10-12 garlic cloves, peeled, finely chopped
2 large handfuls finely chopped curly-leaved parsley, leaves only
4 heaped tsp dried oregano
2 tsp sea salt flakes
5 tbsp red wine vinegar
4-5 tbsp extra virgin olive oil
5 tbsp cold water

For the barbecued sirloin

1 x 2kg/4½lb well-hung boneless beef sirloin, not rolled (weight after bone removed)
freshly ground black pepper

Preparation method


For the chimichurri sauce, place the chopped chillies and garlic into a bowl.
Add the remaining chimichurri sauce ingredients and stir well until combined. Cover the bowl with a sheet of cling film, then set the mixture aside for 4-6 hours to allow the flavours to infuse, or preferably overnight.

One and a half hours before serving the meal, light the barbecue outdoors and leave the coals to heat through for one hour.
When the coals are white hot and the flames have died down, suspend a cooking rack 25cm/10in above the coals.

Season the beef sirloin all over with salt flakes and freshly ground black pepper, then place the seasoned beef sirloin, fatty-side down, onto the cooking rack. (NB: Ideally, during cooking, the barbecue should be covered with a lid and the vents should be open.)
Sear the fatty side of the sirloin for 4-6 minutes, or until golden-brown, then turn the beef over and continue to cook for 20-25 minutes.
Turn the sirloin steak over again and continue to cook for a further 20 minutes (for medium), or until the sirloin is barbecued to your liking.
When the beef sirloin is cooked to your liking, remove it from the barbecue and set aside to rest for ten minutes, before carving into thick slices.

To serve, arrange 2-3 slices of the barbecued beef sirloin onto serving plates and spoon over the chimicurri sauce. Serve with your Dad's favourite side dishes.

From Nicosia/Larnaca, take highway Ayia Napa-Paralimni, exit at Ormidia by the overhead bridge. Pass Ormidia stadium into the village going right towards the centre. At T-junction where the cafes are turn right, then left, follow signs Avgorou. Pass water reservoirs, another 5 km towards Avgorou you’ll pass Sarris supermarket. 300 m. after Sarris turn right onto the stone road leading to the herb garden after 1 km.

From the Paralimni—Ayia Napa areas, head for the village of Frenaros, taking the road to Liopetri. Just out of Frenaros take the right turn to Avgorou. Head into the village keeping the cemetery on your left, turn left at the main street junction. Follow this road through the center of the village towards Ormidia. As you leave Avgorou, take the white stone road on the left after the second speed bump. There will be signs posted so keep an eye out!

In the Life of a parent


Getting ready for work used to be so easy.  If you woke up late, meaning 15 minutes before you’re supposed to leave for work - no biggie. You showered the night before, so just brushing your teeth, slapping on some mascara and putting your hair in a ponytail was enough.  You’d end up at work looking smart and tidy and no one would be the wiser.

After you have a kid everything changes. Waking an hour before you’re meant to leave the house is too late. First of all showering the night before is a luxury. If you manage to stay awake after putting baby to sleep, you call it an accomplishment.   Doing one of 10 million things that still need to be done, is a really productive evening.

Showering?  What’s that?  And you begin to wonder why we wasted so much space in the house on bathrooms.

In the morning, a 2 minute shower may still be an option - only if the baby is still asleep. If not….another smelly day at work and a whole bunch of bargaining…

First of all, your playful child thinks its the perfect time for a puzzle.  So she picks up a 100 piece, nonetheless, empties it all out on the floor in an attempt to do it herself.  But…mommy must watch!  If you manage to pry yourself away just long enough to grab the first thing you see in your closet you’ll be half way to going downstairs.

Then its time to dress your princess. Now, the days of picking out whatever you wanted and putting it on her are long gone.  Your toddler has a very strong mind of her own and knows exactly what she wants.  And what she wants is for everything to be the same colour. Whatever that colour may be.  So putting on a white top and blue shorts is not good enough. She starts pointing to her socks and shorts saying: “Mommy, it’s not the same! I want same-same!” Pointing to the two things that are not the same. But look, your socks are the same as your top and your shorts are the same as you shoes conversation ensues and you just pray to God that she will accept today’s combination.  And she does, after a bit of convincing and making sure that, in that case, the hairband is blue as well. Thank God, because you have no idea where the blue socks are.

Once we leave the chaos of undone beds and scattered puzzle pieces, its time for breakfast.  Breakfast is a gamble of its own… you hope that seating arrangements won’t be an issue today, that instead of cereal with milk or as she calls it “cookie mleko” she’ll settle for a cheese sandwich on the go. And if not, just dry “cookies” in a bowl will still do.

Scrambling for keys, bags, wet wipes is the climax just before you step out the door.

And this, my friends, is my usual morning routine since I’m always late to wake up.

So if you ever see me in the street, with my hair in a mess, no make up and a strange smell is suddenly coming from somewhere, just know… I’ve had a rough morning, so please cut me some slack.

A 'Cracking Burger' by Jamie Oliver


It is 'Natiional Burger Month' in the US, 'National Barbeque Week' just past in the UK and the Barbeque season well and truely upon us here in Cyprus. Here is a delicious recipe by Jamie Oliver which works just as well on the barbeque as it does in the grill pan!

There is nothing better than a home-made burger!! Everyone loves them, they are easy to make and, if made with quality, fresh ingredien they certainly do not have to be unhealthy, especially if served with a salad. Once you’ve mastered this tasty basic recipe, you can make it your own with different herbs, spices, fillings and toppings.

Ingredients
• 12 cream or plain crackers, such as Jacob's
• 8 sprigs of fresh Italian parsley
• 2 heaped teaspoons Dijon mustard
• 1 pound good-quality ground beef
• 1 large egg, preferably free-range or organic
• Sea salt and freshly ground black pepper
• Olive oil
• 1 romaine or lettuce of your choice
• 3 tomatoes
• 1 red onion
• 3 or 4 pickles
• 6 burger buns

Optional: 6 slices of Cheddar cheese

To make your burger
Wrap the crackers in a kitchen towel and smash up until fine, breaking up any big pieces with your hands, and put them into a large bowl. Finely chop the parsley, including the stalks. Add the parsley, mustard, and ground beef to the bowl. Crack in the egg and add a good pinch of salt and pepper. With clean hands, scrunch and mix everything up well. Divide into 6 and pat and mold each piece into a roundish shape about 3/4-inch thick. Drizzle the burgers with oil, put on a plate, cover and place in the refrigerator until needed (this also helps them to firm up).

To cook your burger
Preheat a large grill pan or frying pan for about 4 minutes on a high heat. Turn the heat down to medium. Place the burgers on the grill pan or in the frying pan and use a turner to lightly press down on them, making sure the burger is in full contact. Cook them for 3 or 4 minutes on each side — you may need to cook them in two batches. Alternatively, prepare your barbeque and cook to your liking

To serve your burger
Wash and dry a few small lettuce leaves, tearing up the larger ones. Slice the tomatoes. Peel and finely slice the red onion. Slice the pickles lengthways as thinly as you can. Place all this on a platter and put it in the middle of the table with plates, cutlery, ketchup, and drinks. Transfer your burgers to another plate and carefully wipe your frying pan or grill pan clean with paper towels. Halve your burger buns and lightly toast them on the grill pan or in the frying pan. You could also serve your hamburgers with a chopped salad.

PS. I would still make this quantity even if it was just for 4 people, wrap the extra 2 burgers in plastic wrap and put them in the freezer.

That's cool! Angel Delight bring out do it yourself 'ice cream


Making your own ice cream used to take hours of stirring or an armoury of kitchen gadgets.But now for the first time a packet mix ice cream has gone on sale that takes away the hassle.

It has been created by Angel Delight, which says it is as easy to make as its well-known whipped instant dessert.To make the ice cream, all you do is whisk the powdery contents of a sachet with cold milk in a bowl for a few minutes before putting it in the freezer.After four hours, the ice cream – which is available in strawberry, chocolate, butterscotch, and vanilla – is ready to serve.Extra ingredients, such as marshmallows, peanut butter and biscuit pieces, can be added to the mix so that children can invent their own flavours.The sachets cost £1 each and make half a litre of ice cream.

John Steels, who has helped develop the product at Angel Delight’s factory near Stafford, said it was being brought to stores just in time for the hot weather. He said: ‘If the weatherman continues to behave himself then we expect the product to be really popular.

‘It’s fun to make and doesn’t require a whole lot of special equipment. All you need is a bowl, whisk and some milk

We have found that parents are already turning making the ice cream into a fun event with their children.
'You can make it in the morning and it is frozen and ready for after lunch.
‘Parents seem to have quite a fondness for the brand because they remember eating Angel Delight when they were children.’Ice cream normally has to be stirred several times during the freezing process to stop it crystallising. This is not necessary with the Angel Delight because the water is so bound up within the mix that it doesn’t form large ice crystals.The mix is available from Tesco and The Co-operative. It will be sold by Asda from next month.

When Bird’s Angel Delight was introduced in 1967 it offered ‘the taste of strawberries and cream’ It had its heyday in the 1980s when it became a popular family dessert, but it has been making a comeback in recent years as parents return to the nostalgic taste.

"In the child state, there is no self-consciousness, ego, fear of social ridicule or any of the other inhibitory walls that we build around ourselves as we grow up and grow older. This kind of freedom from self-consciousness is essential, but very rarely possible with the kind of responsibilities and demands we face on a daily basis.

The evening will be a two hour theatre workshop, in which we will play and use our imagination. Through theatre games and team building improvisation my aim is to bring together a bunch of people and to engage them in the creative process of making simple stories , and to have a lot of fun in the process.
