We've been baking quite a bit at Emma's Lunch this week, so I thought it would be a great idea to share a fun simple, recipe which you can do with your child.
You can totally let your little one be the chef for this one.
Pre-measure all the ingredients and have them in separate containers. Let your child add them to the mixing bowl as necessary. This recipe doesn't even require a mixer. A good stir with a spoon and you're done.
Ingredients:
1.5 cups of flour
1tsp baking powder
1tsp baking soda
1/2 tsp salt
3 large or 4 regular sized bananas, mashed
3/4 cups of granulated sugar
3/4 cups of granulated sugar
1 egg
1/3 cups of olive oil
Add chocolate chips for a twist to the recipe
Makes 12 big muffins or 24 mini muffins.
Preheat the oven to 175C. Have your child put muffin paper liners in the muffin tin. Let her add flour, baking powder, baking soda and salt in one bowl and stir to combine.
In a separate large bowl, mash the bananas and add sugar, egg, oil and mix using a spoon. Add the flour mixture to the banana mixture and and mix with a spoon until combined.
Scoop the mixture into muffin tins.
Bake regular sized muffins for 20-25 minutes and mini muffins for 10-15 minutes.
Allow your child to serve to guests. She will be so proud! Serve while hot or eat cold. They are equally delicious!
