HOMEMADE FUDGE...... recipe makes an easy sweet treat or a stunning edible gift!!!!



Peanut butter fudge

Peanut Butter Fudge

Ingredients
125g/4½oz butter
500g/1lb 2oz dark brown sugar
120ml/4fl oz milk
250g/9oz crunchy peanut butter
1 vanilla pod, seeds only
300g/10½oz icing sugar

Preparation method
  • Melt the butter in a saucepan over a medium heat.
  • Stir in the brown sugar and milk, and bring to the boil for 2-3 minutes, without stirring.
  • Remove from the heat, and stir in the peanut butter and vanilla seeds.
  • Place the icing sugar in a large bowl, and pour the hot butter and sugar mixture on top. Using a wooden spoon, beat the mixture until smooth. 
  • Pour into a 20cm/8in square baking tray, and set aside to cool slightly, then place in the fridge to chill completely.
  • Cut the fudge into squares with a sharp knife, turn out of the tin and store in an airtight container.

Pumpkin fritters


 

A delicious Greek recipe, ideal to use up excess pumpkins!!! Happy Thanksgiving :)


Ingredients

1kg pumpkin, cleaned, peeled
Sea salt and cracked pepper, to taste
1-2 tsp ground cumin
1 cup flat leaf parsley, chopped
1 cup spring onions, chopped 
1–1½ cups plain flour
Olive oil, for frying

Preparation
Grate the pumpkin, place on a large plate and sprinkle with sea salt. Let it stand for 10–15 minutes.

Place small amounts of pumpkin in your hands and squeeze any excess liquid out of it. Transfer all the squeezed pumpkin to a bowl. Season with salt and pepper, add the cumin and mix through. Add the parsley and onions and combine well.

Gradually mix small amounts of the flour through the pumpkin until the mixture thickens, enough to hold the shape of the pumpkin fritters.

Take a generous amount of the pumpkin mixture and roll it in your hands to form round patties. Try not to make them too thick as the fritters will not cook in the middle.

In a frying pan, pour in enough olive oil to cover the base of the whole pan. Heat the oil over medium-high heat.

Place the pumpkin fritters in the pan and fry on both sides, until they are golden brown. It is best not to overcrowd the frying pan, so make sure there is a little space between each fritter. Cook in batches if necessary.

Drain the fritters on kitchen paper. Serve hot or at room temperature.

Traditional roast turkey with all the trimmings, followed by pumpkin pie (recipe next week), makes for the perfect Thanksgiving feast. 

Perfect roast turkey

How to roast turkey perfectly? A generous smear of butter and a few onions are all that are necessary in this easy recipe.
Ingredients

· 100g/3½oz butter, softened

· 2 tsp sea salt

· 2 tsp freshly ground black pepper

· 4.5kg/10lb turkey, with giblets removed and cavity wiped clean

· 3 large onions, halved
Preparation method

1. The bird should be prepared the night before. Mix the butter with the salt and freshly ground black  pepper, then season the cavity of the bird.

2. Rub the butter mix all over the turkey. Fold a large piece of greaseproof paper to double thickness and lay over the breast to protect it during the cooking.

3. Leave it in the fridge overnight.

4. On the day you wish to serve the bird heat the oven to 220C/430F/Gas 7.

5. Take the turkey out of the fridge and allow it to come to room temperature while the oven is heating up.

6. Put the onions in a large roasting tray. Put the turkey on a trivet or wire rack in the tray.

7. Pour one cup of boiling water into the cavity of the bird and seal with a skewer. Pour two cups of boiling water into the bottom of the tin, then cover the whole thing with two layers of foil, making sure it is well sealed around the edges.

8. Cook for 20 minutes, then reduce the temperature to 200C/400F/Gas 6.

9. After 1½ hours, remove the foil and greaseproof paper.

10. Cook for a further 40 minutes and don't open the oven door until the cooking time is up.

11. To test whether the turkey is cooked, insert a skewer or knife blade into the point where the thigh joins the breast - the juice should run clear.

12. If it is pink, cook it for another 20 minutes and test again. Leave the turkey to rest in a warm place for at least 15 minutes before carving.

13. Strain the juice from the bottom of the tin into a large jug - the fat will rise to the top, leaving the aromatic turkey and onion beneath.

14. Skim off the fat use the juices to make a gravy or serve as it is.

More than 40,000 people have already enjoyed the experience of this interactive free exhibition

The European Space Expo will be deployed in Larnaca, from 12th to 18th November 2012, offering visitors the chance to dive into the universe of the European satellite navigation systems, Galileo and EGNOS, and GMES the European Earth Observation programme.

The Expo allows visitors to discover how Space can improve our daily lives and help us face the environmental and social challenges that Europe and its citizens are confronted with.

Twelve touchscreens and the Omniglobe take visitors on a journey exploring the services provided by Galileo/EGNOS and GMES and their applications in domains such as the conservation of natural resources, civil security, air and road transport, or even territorial planning. Furthermore, a programme of daily conferences aimed at the general public will be available to visitors.

The European Commission has arranged a series of children’s activities for the Space Expo, allowing youngsters to learn how Space affects their lives in a direct way. In particular, children will have the opportunity to attend talks on Space-related subjects, which have been tailor-made for the younger audience.

The exhibition is open daily from 10.00 to 14.00 and 16.00 to 18.00 on weekdays, 10.00-20.00 on Saturday and Sunday. Admission to the exhibition is free.

Teriyaki chicken



Make this tasty chicken teriyaki recipe for a speedy supper. Serve with rice and steamed pak choi

Preparation method

  1. Place the Tabasco sauce, honey, sesame oil and soy sauce into a bowl and mix well. Place the chicken slices into the bowl, stir well to coat and leave to marinate for five minutes.
  2. Heat the vegetable oil in a frying pan. Remove the chicken slices from the marinade, reserving the marinade, and fry for 3-4 minutes on each side, or until completely cooked through. Remove the chicken from the pan and set aside to keep warm.
  3. Pour the marinade into the pan and boil rapidly for a few minutes until slightly reduced. Add the butter and whisk until the sauce becomes glossy.
  4. To serve, place the chicken slices onto a plate and pour over the sauce from the pan. Serve with rice.

The subjects we teach vary, we have painting for all ages (a variety of mediums), illustration (character design, story board making and book/comic making) craft lessons, and finally experimental arts which is a lesson using using colours, sounds, as well as visual imagery and body expression to create art!

Christmas Craft to do with Your Kids

Here's a great craft to do with your kids, its simple and quick for those short attention spans :)

What you'll need:
Orange & Brown Paper
Scissors
Glue
Googly Eyes
Markers

Trace two feet on brown paper and two hands on yellow paper. Cut out with scissors.  Depending on the age of your child you may need to do this yourself.  I let Emma colour the back of the foot while I cut out the hands to keep her occupied.  Then we glued the antlers to the foot cut out and the other foot to cover the back.

Then we cut out a round nose and coloured it red and glued it to the face together with the googly eyes. And then Emma drew the smile...

Facebook for Parent-preneurs. Have you ran out of ideas?

Dear LPNeur on Facebook,

This article touches a bit on etiquette but it is mainly focused on content for your Facebook business page. In previous articles we have discussed what the users of social media crave for as regarding posts in general but we haven't really gone into the details of a posting strategy. All Facebook page owners or administrators know that great content is essential and that engagement follows as a tool to keep the business or cause in potential consumers' minds. The next step is to take the person out of the social media platform and approach them via phone, email or even face to face. 

When living in a small island like Cyprus many times business owners feel betrayed by acquaintances or friends who start doing as they do and they feel they are being followed and mimicked by a certain person. This is reinforced by the fact that it is common practice for similar businesses to start popping up around the same time in a given area. Why is this happening? On one hand, it is a small place and there aren't many options. Once someone tries something and it seems to work, immediately others follow. Is this fair? That doesn't really matter in the end, what matters is that it happens and it is not illegal, so basically there's nothing you can do about it. 

This could lead to a lot of antagonism, not pure, healthy competition, but some kind of bitter, awkward feeling that takes a lot of energy from the person who is building up their business or activity. Since Facebook is nothing but the reflection of reality, many page administrators get the same feeling. The danger is that at some point administrators might start finding it extremely difficult to share original content and this might lead to inactivity. 

We have to put things into perspective. There are people who are opportunists and there are the ones who sit on the side waiting for someone else to test an idea and then just copy. We have to learn to live with this and just carry on with our plan, focus on our strategy. One way of doing it is to invite these people to work with us (not for us) as we can all benefit from each other. If this is too difficult to pursue we can just ignore them but if we still can't then we need to understand that not only Cyprus or Larnaca but the whole world has become a small place for entrepreneurs. People are aiming more and more at working from home, spending more time with their families and being less dependent on someone else's conditions. The activities or services that can be carried out as new business ideas are limited. The most successful ones in the Facebook environment are the cute or delicious creations like custom jewellery or beautiful dessert ideas. Then we have the entertainers, beauty related activities and services of all kinds. This is Cyprus. Let's not allow this reality to take away our energy, determination and great ideas from us. Let's accept that others can feel attracted by doing what we do and they can do it their own way. It will all fall into place at the end. Not two beauty salons are exactly the same. When the person comes into contact with the service or product, there is a unique chemistry and each consumer will find his favourite place and at the end all business owners will find their niche. There is enough for everyone and we musn't fear or stop doing what we are doing because of others mimicking us. Let's create, share, express and include instead of the opposite. It is a lot more productive to congratulate our 'competitor' and even cooperate when possible than ignore or feel aggravated. Hostility should be completely out of the question. don't you agree?
